You'll find discussion of all of this in
http://sbarnhill.mvps.org/WordFAQs/TOCTips.htm, but here's a summary:
1. Omit the style that produces 1, 2, 3, etc.
2. Apply numbering to TOC 1 (so that Heading 1 will be numbered). Leave TOC
2 and TOC 3 alone (except that you'll need to change the indents if you want
everything flush left)
3. Omit the numbering from Level 1 by using the \n 1-1 switch in the TOC
field.
