What you are describing is a protected form. You can still access the legacy
form fields in Word 2007, but you must first display the Developer tab
(Office Button | Word Options | Popular: Show Developer tab in the Ribbon).
Then, in the Controls group, look for the Legacy Controls section, which
contains the legacy forms buttons to insert text, check box, and dropdown
form fields. Unfortunately, the palette doesn't include the padlock button
to protect the form, so you have to do that with the button on the Review
tab (or add the Lock command to the QAT).
