Default Applying template after typing document

You can certainly attach a different template to a document, via Tools
| Templates and Add-Ins, but this won't change the layout of the
document; it'll just add the paragraph and character styles (assuming
that you check the "Automatically update document styles" option).
Therefore, doing what you are already doing--importing into a
letterhead document--is the easiest way to handle this.
