Default Header numbering that spans multiple lines

Hi all. I thought I was a reasonably competent user of Word after basically growing up using it. Then I discovered this forum, and I feel like a beginner again!

I'm currently writing my PhD thesis, and would like to format my headers as follows:

1.
Chapter name


1.1 - Header 1
Body

1.1.1 - Header 2
Body

etc.

So... have the chapter number followed by a line break, and then the chapter name, and then the headers follow the standard multilevel number formatting. How easy is this to do?

I'd also ideally want the chapter number and name to then appear on one line for the ToC.

So...

1. Chapter name ............................1
1.1 - Header 1 ...........................1

etc.

Any help would be greatly appreciated!

EDIT - For what it's worth, I'm using Microsoft Word 2011 for Mac 14.2.4 on Mountain Lion 10.8.2.
