If you insert text form fields, your respondents will be able to type
freeform text. Alternatively, if you want a section that permits more
latitude even than a text form field, you can insert section breaks and
protect only specific sections of the form.
It sounds as if you don't have much experience with forms. You might want to
read the series of tutorials by Dian Chapman that are linked from
