Default how can I centre text in a text box?

There is one way to fake this, though. Insert a borderless single-cell table
in the text box and use the vertical alignment controls for tables.

Believe it or not, shapes containing text in Word have no setting for
Vertical Alignment (even though the implementation in other MS programs
includes it).

Horizontal is simply a matter of using the Center Alignment icon on the
Formatting Toolbar while the shape is selected, but to adjust vertical
position of the text you have to use "empty paragraphs" (Enter key),
FormatParagraphSpacing Befo, or FormatAutoShapeText Box - set the
Top
margin to move the text down.
