Where do I check for this?

Or maybe the text is formatted as 'hidden' - and, although hidden text
display might be 'on', hidden text printing is 'off'.

Do you see the text in Print Preview? If so, it would seem like an
issue with the printer. Get hold of one of the free PDF
Printers (Primo PDF is one) and print the document to a .pdf file
and
see if the text appears.

I have created a merge document and when I go to print it, it spits
out
blank
pages. I have re-created the document, rebooted and tried printing
from the
merge document, from the completed merged file and from the print
preview in
both. Help.
