Instead of using 1 - Chapter One, use One as the auto number. That is, type
Chapter before the number field and select One, Two, Three as the number
format. This will give you the chapter number automatically and as part of
the outline numbering. You can then use Include Chapter Number in your page
numbers. You can also add numbering to the actual titles of the chapters (if
any) in the TOC as described in
