Default How do I change the date format in a header

You need to add a formatting switch; see
http://word.mvps.org/FAQs/TblsFldsFms/DateFields.htm

The easiest way to do this, however, is to use Insert | Date and Time,
select the format you want, and check the "Update automatically" box, then
insert.
