Default Using a different Mailbox for Mail Merges

I believe that the only way to achieve that is by the method that you
already know about - being logged into the Generic Mailbox when the merge is
being executed.

We are using Mail Merge to send letters to customers; however when we send
them the e-mail address it uses is the individuals address that sent them.
