Click the big round button at the top left. "Word Options" at the
bottom right. choose "Customization" from the list on the left.

Click the "Customize" button next to "Keyboard shortcuts". click
in the "Press new shortcut key" box and press Alt Gr + s. Note
the command to which it is assigned (DocSplit).

From "Categories", select "All commands". From "Commands", select
DocSplit. Select the entry (Alt+Ctl+S) from the "Current keys"
list, then click on "Remove".

Repeat for the other command.
