Default styles toolbar

If you select and then double click a tab on the Ribbon, it will be
minimised so that just the tabs appear and subsequently single clicking on a
tab will expand the Ribbon so its contents are revealed. When the focus
moves back to the document, the Ribbon is once again minimised.

from) or can be customized on a template by template basis.

At its simplest level, simply right click on a Style in the gallery and
choose REMOVE FROM QUICK STYLE GALLERY.
