In Tools Options Track Changes, one of the options for deleted
text is Strikethrough, which puts a horizontal line through the text.
You can also choose a color for the deleted text.

If you have Word 2002, the options for formatting deleted text are
inexplicably missing from the dialog. You can use VBA to set your
preference; see

If you aren't at all familiar with the Track Changes feature in Word,
look it up in the Help.
