How can I change this? I tried in the formatting and it would change it.

I am assuming that this is in the mail merge main document, in which case
you have the shading of fields turned on. I can be turned off via the Options facility in Word. However, when you execute the merge, the fields will be replaced by the text from the data source and there will be no shading. -- Hope this helps.
