Default Saved Documents

I have a letter that I reuse saved in my word and everytime I save it with
the current date on it, but when i later bring it up it automatically puts
the current date in the date field. I have tried looking everywhere and they
all tell me how to update it automatically to keep the date current on the
document. But I don't want it to update. I need it to save the date the
letter was created. Any help would be greatly appreciated. I'm sure it is
something very easy to do but I can't figure it out.
