The dialog you referred to was probably the Format AutoFormat dialog, together with the options in Tools AutoCorrect Options AutoFormat that control what changes it makes. In Word 2007, that dialog isn't on the ribbon, but a button to display it is available to be added to the Quick Access Toolbar. In the Office button Word Options Customize dialog, set the category to Commands Not In the Ribbon, and add the "AutoFormat..." button.
