If you're referring to the Theme Fonts button in the Themes group of
the Page Layout ribbon, it can't be removed -- none of the built-in ribbon groups can be altered. If you're truly determined, get Patrick Schmid's RibbonCustomizer add-in from http://pschmid.net/office2007/ribboncustomizer. Use it to remove the entire built-in Themes group and replace it with your own group that omits the offending button.
