You can add the Insert Form Field and Protect Document commands to the QAT,
which will give you much the same functionality as before - and if you stiull have access to an earlier version of Word you can add the forms toolbar from that to 2007 - see http://www.gmayor.com/Toolbars_in_word_2007.htm where I have used this as an example. If you are using a protected form, then to force updates of other fields dependent on them (and this applied equally to earlier versions), you should check the calculate on exit field property, however this will not force an update on REF fields in the document header/footer. For those you need to force an update with a macro run on exit from the last relevant field.
