I have a document in Word that requires a specific header for the first two
pages and then another header for the remainder of question. The footer must
run consistently through this document i.e. page 1 of 1, etc. from the first
page to the last.

You'll need a section break, and you'll need to unlink the headers in the
two sections, leaving the footers linked. See
