We've got a huge document with hundreds of captions for tables and figures.
We have just been asked to include chapter numbers. I know how to do this
when adding a new caption, but is there a way to change it globally so I
don't have to re-do each individual caption?

If you just add one more caption to the document with the Include Chapter
Number box checked in the Caption Numbering dialog, the Chapter Number will
be added to all of the existing Captions. Then all you need to do is delete
the new caption (assuming that it is unwanted).
