Default How do I set the spacing for the top and bottom edges of a table .

I would like to have some space between the top and bottom edges of a table
from the rest of the document, but I cannot find an option to do this.

Yes, unfortunately, this is a limitation of tables. If you aren't using a
border, you can add some Space Before to the top row and Space Below to the
last row. Failing that, you have to add space to the paragraphs preceding
and following the table.
