Default Define a new Field Name

I work with a preset list of fields in my CRM system. They do not match the
fields predefined in Word 2007 for merging. How do I add them?

Sounds like you are using the Address Block. Instead of doing that, just
insert the merge fields that you want in the configuration that you want
them.
