typing single space, hit enter cursor drops 2 spaces, I want 1 ?
If you are using Word 2007 right-click on the style in the toolbar and change
the settings in format | paragraph. The settings are for space before/after. You then need to make this the default for all documents. No, Shift-Enter doesn't start a new paragraph!

Shift + Enter doesn't start a new paragraph. Sorry if I gave that impression.
