user to complete a document automatically such as the gender of the client so
it will automatically put he or she in the document?

Word has no exact equivalent of the WP keyboard merge, but you can insert FILLIN
and/or ASK fields (look in Help and Insert/Fields).

Create a document template (*.dot). Insert FILLIN fields. When the user uses
File/New to create a new document from the template the FILLIN fields will
trigger automatically.
