Default editing a document

HOw do I edit a document that someone else is helping me work on . I dont
want to delete what they did I just want to put X.s over it ? Can that be
done

You could turn on Track Changes and it would show what you've changed. If
someone doesn't want to accept it later, they can deny the changes.
