Default Text Form Fields - What is the benefit?

Hi - I'm currently working on a document using the developer - and inseting
text form fields - with the view to protect the document, and send to clients
for their completion. I just don't know how to manipulate the data that will
nnow be captued by the text form fields - do they import/export to excel? do
they summarise somehow? what is the benefit of using form protected fields?
Thanks!

Here are some solutions which use form fields to aggregate the data. In most
of the solutions she used Access to store the results, but Excel could be
the "database" just as easily.
