Is there a way to change the ribbon (not sure that is the right term?) back

Not really, no. There are add-ins that simulate the menus, but there's

You really don't need third party commercial Add-Ins. You could
create your own Addin that will come very close to replicating the old menus in Word2003 and earlier. Right click at the top of the screen and toggle "Minimize the ribbon"
