I created a table in Word. How do I protect certain cells within that

I created a table in Word. How do I protect certain cells within that
document?

Unless you have Word 2003, Word doesn't provide a functionality to
unprotect just single cells.

You need to insert form fields where the user is allowed to enter
information, then protect the document as a form.
