After creating a document in Word (it prints in black), I attempt to print
envelopes and they print in blue/gray despite black being selected as the
default color.

Check the style named Envelope Address. If it has a color, change it to
black or Auto.

I did that, it still printed in blue. What I finally did was power
everything down, including the printer, bouted back up, then printed
envelopes and then they printed in black. Something got caught in the
spooling process and once it was cleared (so far) it seems to be corrected.
