Default IncludeText Fields

I using Word 2003 and have a document that is functioning as a form with
fill-in fields. I want the user to fill in the requested information in this
document first. Then as they open subsequent related documents, I want the
information that is common to both to update to the second. I have been
playing around with the IncludeText field and I can make it work for
bookmarked text, but I'm not getting the desired result when I bookmark fill
in fields in my source document. In my target document, I get the field w/its
default value...not whatever was eneterd by the user. I read
http://daiya.mvps.org/includetext.htm and added the \!switch (I was just
guessing) and that didn't help. Am I missing the boat or am I trying to do
something that can't be done. I apologize in advance for my ignorance.
