Default How to . . Select all text up to a specfied string

Holding down the shift key and clicking where you want to select to, either
forwards or backwards will select text from the current cursor point. Is
this helpful?

Is there any way I can select all text from the current position up to a
specified set of characters?

For example, if you were at the start of this post, then "Select to
'graph.^p'" would select all the text up to the end of this paragraph.

Partially - That is OK for short sections of text.

But in my case, the text I want to select could cover several pages, so some
sort of automated "Select until" command is what I really would like.

And the search sequence could include carriage-returns or other control
characters (e..g. ^p ^l etc)

Place the cursor at the beginning of the text to select. Press F8 (or
alternatively double-click the letters EXT in the status bar) to turn
on Extend mode. Press the letter or other character you want to select
to. Finally, press Esc (or double-click EXT in the status bar again)
to turn of Extend mode.
