[Five By Five]

I want to put a field in a table cell that, when updated, accurately counts
the number of words in a specified section of a Word document and puts the
value in the table cell.

Note that section could be the whole of the document, a named/numbered
section, a page or range of pages, or even a "selection."

I am not interested in the working feature of selecting text and using
Tools-Word Count. I am interested in the use of the Word 'field' version
that implements this feature.

It would be handy if the NumWords field had a switch to allow you to
reference a bookmark; then you could bookmark the text you want to count.
Unfortunately, it doesn't, so you'll need a macro.
