Default How do "unlock" a word doc so elements can editied?

I downloaded a word doc that's formatted with fields etc. and I can't change
some of the elements. E.g. I can't change the header and footer (when I go to
the View menu the header/footer option is gray and can't be opened), I can't
copy the tables etc.

Apparently the author didn't intend to have it modified. You can go to
ToolsUnProtect Document, but you will probably be prompted for a password.
If you don't know what it is you won't be able to turn the protection off.
The Protect Document Task Pane should let you know if/where you can enter or
edit
