While in Word; How do I turn off the auto correct that if I have text
written, I then come back to add more text and as I enter in the additional text the auto correct deletes the previous text character by character |

You probably have Word set to overwrite rather than Insert. Try taping
the Insert key on your keyboard. |

Press the INS (Insert) key once or double-click OVR on the status bar.
