Default Strike through

Is there a keyboard command for strike through? (i.e., ctrl "a" to select
all text, ctrl "c" to copy, etc...)

No, but you can easily assign one. Open Tools | Customize, click
Keyboard..., then select the Format category, scroll down to Strikethrough,
enter your desired shortcut, and click Assign.
