Default Stop automatic capitalization.

When I use word for creative writing sometimes I decide to put words on a new
line and it is a struggle to get the computer to automatically capitalize the
first letter of the new line.

Struggle in what sense? If you start the new line by pressing enter then the
new line is considered by Word to be a new paragraph -- so the first word
will be capitalized if that's what your settings ask for.

Are you wanting it to capitalize, as your post suggests or stop capitalizing
as your subject line suggests? If the latter, try using a line break
(Shift+Enter) instead of a paragraph break (Enter). Also remember that you
can Ctrl+Z immediately to Undo any AutoCorrection you don't like. Or you can
turn off the option in Tools | AutoCorrect Options.
