Under Envelopes and Labels i've picked the label product number and entered
the text that I want for the card then clicked on "New Document". After
reveiwing the card I want to edit the text. How do I go back to the window
where I entered the text? Is this the only way to change the text on all the
cards on the template?

No, you can change the text on a single card, copy it, select the entire
table, and paste.
