Default setting up a table template

I use about all MS products except WORD. I need some quick tips to get up to
speed. I've been through the HELP section and can't find what I'm looking
for.

1) Table: 5 rows x 2 columns. How do I get the table to always be 10" in
height? Do I have to set each row height accordingly to force the height to
10"?

2) Once I get the table dimensions established, how can I lock everything in
place? Any accidental bump or drag seems to throw things out of whack again.
Does WORD have layers?

Default setting up a table template

Yes, you will need to set row heights to an Exact amount. Disable auto
resizing (of columns) through the Table Options or by choosing "Fixed Column
Width" on the Table | AutoFit menu.

How do I make that table show for every page in the document?

You can't. But you can save the table as an AutoText entry.
