Default Style Set Limitations in Word 2007?

Word 2007 provides a neat "Style Set" feature that lets you create a custom
set of styles, as well as a bunch of built in style sets. If you point to one
of these style sets, your document dynamically changes to the selected style
set. So far so good.

I'm converting a bunch of company templates over from 2003. Some of these
templates use custom colors, depending on the product that will be used (we
use three colors--blue for one set of products, yellow for another set of
products, and green for still another set of products).

The colors are used in document's header text, for the page number, and for
4 sets of custom bullets (for notes, tips, etc.).

After setting up a style set for each color type, I discovered it just
didn't work. The bullet colors and header text colors do not change in the
document, based on the style set selected.

QUESTION--does this feature only work for spacing, headings, etc.? Will it
not work for bullet colors and header colors? (If so, how?). I've set up
these colors in the custom "Color" pallet as well...but there's no way to
"associate" these colors with the bullet lists or header text.
