Default Editing a saved document

When I delete a phrase, it turns red with a line through it.

You have inadvertently enabled Track Changes. Turn it off by pressing
Ctrl+Shift+E (acts as a toggle) and accept the deletion (to accept the
change, select the text, right-click and choose Accept from the context
menu).
