Default WORD 2002 won't retain font styles

When I type a document WORD keeps changing my styles. For example, if I bold
the first sentence of a paragraph, it emboldens the entire paragraph. If I
hit Control Z, it correctly applies the style. Same thing happens with
colors. How do I fix this?
