Can you format the text entered into a table to automatically include a $ and
commas? If so how?

No. Word tables are not spreadsheets.

Only if you insert text form fields in the table cells, give the fields the
appropriate numeric formatting, and then protect the document. Usually, this
would be overkill. Instead, you may want to embed an Excel spreadsheet.
