When I type I now see the symbols for line return at the end of each line and
also I see the symbol for a paragragh each time I double space. How do I
turn this off?

Others have pointed you to
http://word.mvps.org/FAQs/Formatting/NonPrintChars.htm. I would just suggest
that you not press Enter twice in order to "double space." Instead, apply
some Space After (or Before) to your paragraph formatting or style. Empty
paragraphs not only inflate file size but can also cause text flow problems.
