I counted 47 original AutoText entries, although that might be off by a few because this isn't a pristine copy of Word. Similarly, it looks like there are 927 original AutoCorrect entries, give or take a few. According to the official documentation (http://support.microsoft.com/?kbid=211489), the number of AutoText entries is limited only by the maximum file size of 32 MB of text, which also applies to the templates that must contain the AT entries. That implies you could have any number from one enormous AT entry to millions of little ones. Further, you can have more than one template contributing AT entries at the same time. The documentation is silent on the maximum number of AutoCorrect entries. Formatted entries are stored in templates, so they're also subject to the maximum file size. Unformatted entries are stored in .ACL files, and I don't know whether there's any limit on them.
