You want to create a form.

Create your document with all your standard text and leave blanks for your
form fields. Then, bring up the forms toolbar (right click any toolbar and
choose forms). Add text form fields where you need to add text. Spell check
the form. When you are done and the document is formatted the way you want
it to look, click the button on the Forms toolbar that looks like a little
padlock. This will protect the form so that the only area you may type in
are the form fields. Save your document and you're done.

What you are talking about is what Word calls an "online form." Check this
in help. For more about online forms, follow the links at

Chapman's series of articles. You may also want to look at

i have created a word template and secured it, but paragraphs can still be
added to it outside of the form fields I inputted. How do I restrict the
form to the form fields only?
