Default Protecting a Templated Word Document

How can I set up different types of protection within the same templated Word
Document?

I want respondents to be able to fill in some sections with standard typing
and other section I want them to "check" a box.

What you are describing is a protected form. See

You need section breaks and to set protection with different levels for
different sections.

What you are talking about is what Word calls an "online form." Check this
in help. For more about online forms, follow the links at
