Default date field auto fill in

In word documents (business letters, specifically) previously written the
date is automatically filled in which is great. What isn't great is that
when I open the letter at a later date the original date is overwritten with
the current date. I'd like to turn that feature off so the original date
that I wrote the letter is always shown

In the given documents, and (more important) in the template on which the
documents are based, press Alt+F9 to display the field code and change DATE
to CREATEDATE. Then Alt+F9 to toggle back to field results and F9 to update.

Thanks, it worked perfectly in the doc I tried. Do I now have to do this for
every doc or is there a way to change it globally for all docs on my
computer?

For existing documents, you will have to do it manually, but if you change
it in the document template, it will be correct in new documents you create
based on that template.
