Default Scaling a "Book Fold" with Word

I have a 43-page document formatted for 8 1/2 X 11 that I want to print
as a booklet. The size of the pages in the booklet are approximately 4
1/2" x 7".

My thinking on doing this is I can layout the existing document as a
"Book Fold" for 11 x 17 paper, which keeps my existing format, and then
do a "Zoom Scale to Paper Size" to make it fit on the smaller booklet
sheets, which would be about 9" x 7" per sheet (with two pages on each
sheet).

The problem is that when I select "Book Fold," the "Zoom" feature is
grayed out. So, it looks like you can't do a book fold AND a zoom.

Is there a work-around for this? I'd rather not reformat my entire
document, as it is a work in progress and there will by times that I
want to print it out on single sheets at 8 1/2 x 11.
