Default Why do changes in highlighted text effect the entire Word doc?

I am using Word 2003. When I highlight specific text to change the font,
size, formatting, etc. the change effects the entire document. When I click
"Undo" the document goes back to the previous formatting and the selected
text stays in the new formatting.

I just want the highlighted text effected, not the entire document.
