Default Styles applied to unselected text in Word 2003

In applying styles (bullets, numbering, centering) to one line, the same
style shows up in all text, even header and footer. Sometimes undo will
remove all but selected area, but then leave extra line returns in header and
footer. Othertimes, undo removes all styles, even selected area.
